Darwin’s barberry jelly
One of the fascinating fruits Charles Darwin brought back to England from his voyage on the Beagle was the Darwin’s Barberry... and we can find them here in the estate!
Darwin's berries are very sweet, a little blackcurrant-like, with rather large, chewy pips.
Here is one of the recipes you can do with them:
-
Pick berries in mid to late summer, and remove any leaves and unripe berries.
-
Place the berries in a pan with a cup of water (or apple juice).
-
Bring the mixture to a boil, then strain it through muslin or a sieve to separate the seeds.
-
Measure the remaining juice and add an equal volume of sugar—creating a 50:50 mixture.
-
Simmer the mixture until it reaches the setting point.
-
Pour the hot mixture into sterilised jars and seal them while still hot.
Let us know if you know more recipes! We've heard they are also good in puddings or stews.
